Ingredients

  • 1 cup finely chopped cooked ham

  • 1 ½  cups mashed potatoes (cold/ chilled leftovers)

  • ½  cup finely minced onion

  • ½ teaspoon granulated garlic

  • ½ teaspoon dried oregano

  • 1 teaspoon freshly chopped parsley

  • Pepper to taste

  • 1 egg

  • ¼ cup all-purpose flour or 1 cup breadcrumbs

  • Vegetable oil for deep frying as needed 

Directions

  1. In a bowl, combine the chopped ham with mashed potatoes, chopped onion, granulated garlic, oregano, parsley, and pepper. Mix until well incorporated.

  2. Shape the mixture into 1/2-inch croquettes (or patties) about 3 inches in diameter.

  3. Whisk the egg in a separate bowl. Dip the croquette in the egg first then into the bread crumbs or flour.

  4. Heat oil in a medium pot on a medium heat. Fry croquettes for about 5 to 6 minutes on each side, until hot and lightly browned.

  • These croquettes are a versatile dish that can be served with a dipping sauce such as sour cream, spicy mayo, or a tangy mustard sauce.

  • To make the croquettes extra crispy, use breadcrumbs instead of flour for the coating.
