Ingredients

  • 2 large baking potatoes, unpeeled 

  • 1 cup shredded cheddar cheese, divided (about 8 oz.)

  • ¼  cup cream cheese

  • ¼  cup sour cream

  • 2 tablespoon mayonnaise 

  • ½ cup diced cooked ham 

  • ¼ cup diced onion

  • 2 clove of minced garlic

  • 1 tablespoon olive oil

  • Salt and pepper to taste

  • Thinly sliced 1 green onion for serving

Directions

Bake the Potatoes:

  • Preheat the oven to 375°F (190°C).

  • Scrub and pierce the potatoes with a fork.

  • Bake the potatoes for 1 hour or until tender.

Prepare the Filling:

  • While the potatoes are baking, heat the olive oil in a skillet over medium heat.

  • Sauté the diced ham, onion, and minced garlic until the vegetables are tender. Set aside.

Prepare the Potatoes:

  • Once the potatoes are cool enough to handle, slice them in half lengthwise.

  • Carefully scoop out the soft flesh of the potatoes into a bowl, leaving the skins intact.

Mix the Filling:

  • Mash the potato flesh with the cream cheese, sour cream, mayonnaise, half of the shredded cheddar cheese, salt, and pepper.

  • Stir in the cooked ham mixture until well combined.

Stuff and Bake:

  • Spoon the potato mixture back into the potato skins.

  • Top with the remaining shredded cheddar cheese.

  • Place the stuffed potatoes on a baking sheet and bake for an additional 15-20 minutes, or until the potatoes are thoroughly heated and the cheese is melted.

Serve:

  • Allow the potatoes to cool for about five minutes before serving.

  • Garnish with thinly sliced green onions.
