Fruit mousse

  • ¼ cup whipped topping

  • 1-2 drops vanilla essence

  • Dessert shot glasses or small drinking glasses, for serving

Directions:

  1. Prepare the Crust:
    In a microwave-safe bowl, melt the butter. Add the graham cracker crumbs and sugar, then mix thoroughly.

  2. Assemble the Crust in Glasses:
    Divide the cracker mixture equally among two serving glasses, pressing down slightly to form a crust at the bottom of each glass. If you are using smaller cordial glasses, you may need to use less of the cracker mixture.

  3. Make the Mousse Base:
    In a mixing bowl, beat the softened cream cheese and vanilla essence until light and fluffy. Gently fold in the whipped topping until well combined.

  4. Incorporate the Fruit:
    Add the chopped fruit of your choice to the cream mixture and gently fold in. For a smoother and creamier texture, mix slightly longer.

  5. Fill the Glasses:
    Spoon or pipe the mousse mixture into the prepared glasses, filling them to the top.
