Ingredients

  • 3 cans cream of potato soup ( preferably Campbell’s)

  • 1 cup cooked ham diced

  • ⅓ cup diced celery

  • ⅓ cup onion finely chopped

  • 2 cubes reduced sodium chicken bouillon

  • Black pepper to taste

  • 3 tablespoon butter (divided)

  • 4 tablespoon all-purpose flour

  • 1 cup half and half

Directions

  1.  In a large pot, melt 1 tablespoon of butter over medium heat. Add the diced onion and celery, and cook for 3-5 minutes, or until the vegetables are translucent.

  2. Add cream of potato soup, ham and chicken bouillon to the pot and bring it to a boil, stirring occasionally.

  3. In a separate saucepan, melt the remaining 2 tablespoons of butter over medium-low heat. Whisk in the flour and cook, stirring constantly, until the mixture thickens and turns golden brown, about 1-2 minutes.

  4. Gradually stir in the half and half, whisking continuously to prevent lumps. Increase the heat to medium and continue to stir until the mixture thickens, about 4-5 minutes.

  5. Pour the half and half mixture into the pot with the soup base. Stir well to combine and cook until the soup is warmed through.

  6. Season the soup with black pepper to taste. Serve hot, and enjoy!

Tips:

  • For extra flavor, add a bay leaf or some fresh thyme while the soup simmers.

  • Garnish with chopped fresh parsley or chives before serving.
