Ingredients
1 tablespoon olive oil
1 medium onion chopped
2 cups ham diced (cooked leftover)
16 ounce gnocchi (uncooked 1 package)
½ cup low sodium chicken broth or stock
¼ teaspoon garlic powder
1 cup frozen peas
¼ cup heavy cream
1 cup shredded cheese (Swiss, Monterey Jack, Gruyere, or Pepper Jack)
Salt and pepper to taste
Directions
Bring a large pot of water to a simmer. Add the gnocchi and cook according to package instructions. Drain and set aside.
While the gnocchi is cooking, heat the olive oil in a large pan or skillet over medium-high heat. Add the chopped onion and cook until tender, about 3-5 minutes.
Add the diced ham to the skillet and cook until it starts to brown, approximately 1-2 minutes.
Pour in the chicken broth, add the garlic powder and peas, and cook until the mixture begins to bubble, about 1-2 minutes.
Add the cooked gnocchi and heavy cream to the pan. Stir well and cook for about 3-4 minutes, until the gnocchi is tender and the sauce has thickened. Season with salt and pepper to taste.
Just before removing the pan from the heat, add the shredded cheese and mix well until the cheese is melted and thoroughly combined with the gnocchi.
