Ingredients

Risotto
  • 2 tablespoons unsalted butter

  • 1 small onion or ½  of a large onion chopped

  • 2 cloves of garlic chopped

  • 1 cup cubed ham (cooked)

  • 1 cup Arborio rice

  • ½ cup dry white wine

  • 4 ¼ cup chicken broth

  • 2⁄3 cup grated parmesan cheese or pecorino romano cheese

  • ½ cup frozen peas

  • Salt and pepper to taste

  • 1 tablespoon lemon zest grated

Directions

  1. Heat the chicken broth in a saucepan over medium heat until steaming; keep warm.

  2. In a large pot, melt the butter over medium-high heat. Add the chopped onion and cook, stirring occasionally, until softened, about 2 to 3 minutes. Add the chopped garlic and cook for an additional 2 minutes.

  3. Add the arborio rice to the pot and cook, stirring constantly, for 3 to 4 minutes until the rice is lightly toasted.

  4. Pour in the white wine and cook, stirring, until the rice absorbs most of the liquid.

  5. Begin adding the warm chicken broth to the rice, about 1 cup at a time. Stir frequently and wait for the rice to absorb almost all the liquid before adding more. Continue this process until the rice is tender and creamy, about 20-25 minutes.

  6. Once the rice is cooked and has thickened, stir in the cubed ham and cook for an additional 3 minutes.

  7. Add the frozen peas, grated lemon zest, grated Parmesan, and cracked black pepper. Stir well and cook for another minute until everything is heated through and well combined.

  8. Season with salt and additional pepper to taste. Serve immediately.
