Total time 20 minutes Serves 2

Ingredients:

Fish in wine sauce
  • ½ pound boneless, skinless white fish fillets (such as cod, tilapia, or haddock) if frozen, thawed

  • 2 tablespoons unsalted butter

  • 1 cup (8 ounces) cherry tomatoes halved

  • 1 teaspoon onion powder

  • 1 tablespoon garlic powder

  • 1 teaspoon fresh parsley finely chopped

  • 1/2 teaspoon fresh thyme finely chopped

  • ⅓ cup dry white wine

  • 2 teaspoons lemon juice

  • Salt & pepper, to taste

  • For serving: Lemon cilantro rice (optional)

Instructions:

  1. Prepare the Spice Mixture:

  • In a small bowl, combine the onion powder, garlic powder, chopped parsley, chopped thyme, lemon juice, white wine, salt, and pepper. Stir well to mix.

    2. Season the Fish:

  • Place the fish fillets in a microwave-safe dish or casserole (such as an 8×8-inch dish).

  • Evenly rub the fillets with the prepared spice mixture.

  • Cut the butter into thin slices and place them on top of the fish.

    3. Assemble the Dish:

  • Scatter the cherry tomatoes around the fish.

  • Place lemon slices over the fillets for added flavor.

  • If there’s any remaining spice mixture, drizzle it over the vegetables.

    4. Cook the Fish:

  • Cover the dish tightly with plastic wrap and cut a small slit in the center to allow steam to escape.

  • Microwave on high (100% power) for 8-9 minutes, or until the fish flakes easily with a fork.

    5. Serve and Enjoy:

  • Carefully remove the plastic wrap (watch out for steam).

  • Serve the fish and vegetables over lemon cilantro rice or your preferred side.

Notes:

Alternative Cooking Methods:

  • Instead of microwaving, you can bake the dish at 375°F (190°C) for 15-18 minutes or until the fish is opaque and flakes easily.

  • For a stovetop version, sauté the fish in butter and wine over medium heat until cooked through, then add the tomatoes and seasonings.

Best Fish to Use:

  • This recipe works well with mild, flaky white fish such as cod, tilapia, halibut, or sole.

Enhance the Sauce:

  • Add a splash of heavy cream or a pat of butter after cooking for a richer sauce.

  • For a bolder flavor, stir in capers or olives before serving.

Wine Pairing & Serving Ideas:

  • Pair this dish with a chilled glass of Sauvignon Blanc, Pinot Grigio, or Chardonnay to complement the delicate flavors.

  • Serve alongside a crisp green salad, roasted asparagus, or garlic bread for a well-rounded meal.
