Prep time 20 minutes

Serves 2

Ingredients:

peanut butter parfait
  • 2 chocolate graham crackers (crushed, about 2 tablespoons)

  • 1 teaspoon butter

  • ⅛ cup cream cheese (softened)

  • 4 tablespoons peanut butter

  • 2 tablespoons powdered sugar

  • 2–3 drops vanilla essence

  • ⅛ cup heavy whipping cream or whipped topping

  • 2 tablespoons chocolate chips or chocolate syrup (optional)

  • 2 teaspoons roasted peanuts, chopped (optional)

  • For serving: 2 small dessert glasses

Instructions:

1.Prepare the Crust:

  • Crush the chocolate graham crackers into fine crumbs.

  • In a microwave-safe bowl, melt the butter on low (20% power) for 15 seconds.

  • Stir the graham cracker crumbs into the melted butter until fully combined.

  • Divide the mixture evenly between the two dessert glasses, pressing lightly to form the base.

2. Add Chocolate & Peanuts:

  • Sprinkle a few chocolate chips over the graham cracker layer or drizzle with chocolate syrup.

  • Optionally, add a layer of chopped roasted peanuts for extra crunch.

3. Prepare the Peanut Butter Filling:

  • In a separate bowl, mix together the cream cheese, peanut butter, powdered sugar, vanilla essence, and heavy whipping cream.

  • Whisk until smooth and well combined. If the mixture is too thick, add a few drops of milk to adjust consistency.

4. Assemble the Parfaits:

  • Carefully spoon or use a piping bag to fill the peanut butter mixture over the graham cracker base in each dessert glass.

  • Smooth the top with the back of a spoon or a spatula (if using spoon to fill the glasses).

5. Garnish & Serve:

  • Top with chopped peanuts, chocolate shavings, extra chocolate chips, or a drizzle of chocolate syrup.

  • Serve immediately or refrigerate for 10–15 minutes for a firmer texture.

Recipe Notes & Variations:

Make it Lighter: Swap cream cheese for Greek yogurt or use a lighter peanut butter option.

Extra Crunch: Add a layer of crushed pretzels for a sweet-salty twist.

Chocolate Lovers' Version: Use chocolate peanut butter and mix in some cocoa powder for an even richer taste.

Serving Ideas: Serve with whipped cream, caramel drizzle, or a scoop of vanilla ice cream for extra indulgence.
