Prep time 5 minutes Cook time 5 minutes
Total time 10 minutes Serves 2
Ingredients:
1 cup milk
2 medium eggs
⅛ cup sugar
2–3 drops vanilla essence
Pinch of salt
For the topping:
2 teaspoons sugar mixed with ⅓ teaspoon cinnamon powder (cinnamon sugar)
Instructions:
Warm the Milk:
Pour the milk into a microwave-safe bowl and heat on high (100% power) for 1 minute.
Prepare the Custard Mixture:
In a separate bowl, beat the eggs lightly.
Add sugar, vanilla essence, and a pinch of salt, whisking until smooth.
While continuously mixing, gradually add the warmed milk to the egg mixture to prevent curdling.
Microwave the Custard:
Evenly divide the custard mixture between two ramekins.
Place the ramekins into a microwave-safe baking dish and pour ½ cup of hot water around them (this helps the custard cook evenly).
Cover the dish loosely with wax paper.
Microwave on high (100% power) for 3 minutes or until the custard is set but slightly jiggly in the center.
Cool & Chill:
Carefully remove the ramekins from the baking dish and let them cool to room temperature.
Wrap with plastic wrap and refrigerate until completely chilled (at least 1 hour or overnight for best results).
Add the Cinnamon Sugar Topping:
Before serving, pat the surface dry with a paper towel if any moisture has formed.
Sprinkle each custard with cinnamon sugar.
Enjoy as is, or for a more classic brûlée effect, use a kitchen torch to caramelize the sugar topping.
Recipe Notes & Variations:
For a Creamier Texture: Substitute half-and-half or heavy cream for the milk.
Caramelized Sugar Topping Alternative: If you don’t have a kitchen torch, microwave the ramekins on high for 10-15 seconds after adding sugar for a slightly melted effect.
Flavor Twists:
Add a pinch of nutmeg for extra warmth.
Swap vanilla for almond or caramel extract for a unique twist.
Drizzle with honey or maple syrup instead of cinnamon sugar.
