Ingredients

  • ⅓ cup mushrooms, chopped

  • 2 green onions, chopped (white and green parts separated)

  • 2 tablespoons butter

  • 5 oz canned cream of mushroom soup (half a can)

  • ½ cup cooked frozen shrimp, chopped and thawed

  • ½ cup cream cheese

  • ½ cup shredded sharp cheddar cheese

  • 2 tablespoons fresh parsley, chopped

  • ½ teaspoon garlic powder

  • ¼ teaspoon smoked paprika

  • 2 tablespoon hot sauce (or to taste)

  • Crackers or fresh vegetables, for serving

Directions

  1. In a microwave-safe bowl, combine butter, chopped mushrooms, and the white parts of the green onion. Microwave uncovered on high (100% power) for 3 to 4 minutes, stirring halfway through. Drain any excess liquid from the mushrooms.

  2. Stir in the cream of mushroom soup, cream cheese, shredded sharp cheddar, garlic powder, smoked paprika, hot sauce, and the remaining green onion. Mix well until fully combined.

  3. Microwave uncovered on high (100% power) for 4 to 6 minutes, stirring every 2 minutes, until the cheese is melted and the mixture is hot.

  4. Garnish with fresh parsley and serve warm with crackers or vegetable dippers.
