Ingredients

Turkey tacos

Turkey Filling

  • 1 tablespoon oil

  • 1 cup pulled turkey

  • ½ cup chopped onion

  • 1 teaspoon garlic powder

  • ½  teaspoon paprika

  • ½  teaspoon cumin

  • ¼ teaspoon chili powder (optional)

  • Splash of water

  • Salt, to taste

  • 4 flour, whole wheat or corn tortillas

  • 1/2 cup shredded cheese of your choice (optional)

  • Chopped tomato, for garnish

  • Chopped onion, for garnish

  • Fresh cilantro, for garnish

  • Lime wedges, for garnish

Note: you can substitute the garlic, paprika, cumin and chili powder with a 1 ½ teaspoon of taco seasoning. 

Avocado Crema 

  • 1 medium avocado

  • ⅓  cup sour cream or Greek yogurt

  • 1 tablespoon lime juice

  • ¼  teaspoon garlic powder

  • ¼ teaspoon ground cumin

  • Salt to taste

 Salsa (optional)

  •  1 roma tomato, quartered 

  • ¼ of a medium red onion, peeled and quartered

  • 1 garlic clove, peeled

  • ½  jalapeno (optional)

  •  A few stems of  fresh cilantro

  • 1 tablespoon fresh lime juice

  • Salt to taste

Directions

Avocado crema 

  1. In a blender or food processor, combine the avocado, sour cream, lime juice, ground cumin, garlic powder and salt.

  2. Blend until smooth and creamy. 

Note: The Avocado Crema can be made up to 8 hours ahead of time and stored in an airtight container with plastic wrap pressed directly against the surface to prevent discoloration.

Salsa (optional)

  1. Place the fresh tomato, onion, garlic,  jalapeno peppers (if using), cilantro, lime juice, and salt in a food processor or a blender.

  2. Blend until the contents are fine and well combined.

Turkey Filling

  1. Heat a large skillet over medium heat and add the oil.

  2. Once the oil is warm, add the chopped onion and sauté for about 2 minutes, until softened.

  3. Add the garlic powder, paprika, cumin, and chili powder to the skillet with a splash of water. Cook for another minute, until the spices are fragrant.

  4. Stir in the shredded turkey, making sure it’s well coated with the spice mixture.

  5. Add salt to taste and cook for 3-5 minutes until the turkey is heated through. Remove from heat.

Warm the Tortillas

  1. In a separate skillet, heat the tortillas over medium-high heat for 30-60 seconds per side, until warmed and slightly charred.

Build the Tacos

  1. Lay the warmed tortillas out on a serving plate.

  2. Add a generous amount of turkey filling to the center of each tortilla.

  3. Drizzle with salsa (if using) and avocado crema.

  4. Sprinkle with chopped cilantro, tomato, onion and shredded cheese (if using).

  5. Serve with extra salsa, cilantro, cheese, and lime wedges on the side.

Notes:

  • Kick of Heat: Add cayenne, chipotle powder, or fresh jalapeños for heat.

  • Crunch: Add shredded lettuce, cabbages, radishes, or slaw for crunch.
