Ingredients
2 large baking potatoes, unpeeled
1 cup shredded cheddar cheese, divided (about 8 oz.)
¼ cup cream cheese
¼ cup sour cream
2 tablespoon mayonnaise
½ cup finely chopped cooked turkey
¼ cup diced onion
2 clove of minced garlic
1 tablespoon olive oil
Salt and pepper to taste
Thinly sliced 1 green onion for serving
Directions
Bake the Potatoes:
Preheat the oven to 375°F (190°C).
Scrub and pierce the potatoes with a fork.
Bake the potatoes for 1 hour or until tender.
2. Prepare the Filling:
While the potatoes are baking, heat the olive oil in a skillet over medium heat.
Sauté the chopped turkey, onion, and minced garlic until the vegetables are tender. Set aside.

Once the potatoes are cool enough to handle, slice them in half lengthwise.
