Ingredients
Salad dressing
3 tablespoon olive oil
2 tablespoons lemon juice
1 tablespoon red wine vinegar (optional)
2 teaspoons Dijon mustard
1 garlic clove, pressed
½ teaspoon oregano
Salt and pepper to taste
Salad
1 ½ cup pulled or diced cooked turkey
1 cup cherry tomatoes halved
½ of a english cucumber, chopped
1(15-ounce) can chickpeas drained and rinsed
1 medium red, orange or yellow bell pepper, chopped
¼ cup red onions finely chopped
¼ cup Kalamata olives pitted sliced
¼ cup crumbled feta cheese (optional)
1 tablespoon fresh parsley chopped
Directions:
