Ingredients

Salad dressing

  • 3 tablespoon  olive oil

  • 2 tablespoons lemon juice

  • 1 tablespoon red wine vinegar (optional)

  • 2 teaspoons Dijon mustard

  • 1 garlic clove, pressed

  • ½ teaspoon oregano

  • Salt and pepper to taste

Salad

  • 1 ½  cup pulled or diced cooked turkey

  • 1 cup cherry tomatoes halved

  • ½ of a english cucumber, chopped

  • 1(15-ounce) can chickpeas drained and rinsed 

  • 1 medium red, orange or yellow bell pepper, chopped

  • ¼ cup red onions finely chopped

  • ¼ cup Kalamata olives pitted sliced

  • ¼ cup crumbled feta cheese (optional)

  • 1 tablespoon fresh parsley chopped

Directions:

  1. Prepare the Dressing: In a small bowl, whisk together the olive oil, lemon juice, red wine vinegar (if using), Dijon mustard, pressed garlic, and oregano. Season with salt and plenty of black pepper to taste

  2. Assemble the Salad : In a large bowl, combine the diced turkey, cherry tomatoes, chopped cucumber, chickpeas, bell pepper, red onion, Kalamata olives, and crumbled feta cheese.

  3. Combine and Toss: Pour the dressing over the salad ingredients. Gently toss everything together until well combined. Taste and adjust the seasoning with additional salt and pepper if needed.
