Turkey Mashed potato cakes

Ingredients

  • 1 cup finely shredded  cooked turkey

  • 1 ½  cups mashed potatoes (cold/ chilled leftovers)

  • ½  cup finely minced onion

  • ½ teaspoon granulated garlic

  • ½ teaspoon dried rosemary 

  • ½ teaspoon Cajun seasoning (optional)

  • 1 teaspoon freshly chopped parsley

  • Salt to taste

  • Pepper to taste

  • 1 egg

  • ¼ cup all-purpose flour or ½ cup breadcrumbs

  • Vegetable oil for frying as needed (approximately 4-5 tablespoon)

Directions

  1. In a bowl, combine the shredded turkey with mashed potatoes, chopped onion, granulated garlic, rosemary, Cajun seasoning, parsley, salt, and pepper. Mix until well incorporated.

  2. Shape the mixture into 1/2-inch cakes or croquettes or patties about 3 inches in diameter.

  3. Whisk the egg in a separate bowl. Dip the cakes in the egg first then into the bread crumbs or flour.

  4. Heat oil in a non-stick frying pan on a medium heat. Fry for about 5 to 7 minutes on each side, until hot and lightly browned.

  • These cakes or croquettes are a versatile dish that can be served with a dipping sauce such as sour cream, spicy mayo, or a tangy mustard sauce.

Directions:

  2. Stir until the ingredients are well mixed and smooth.
