Ingredients
2 tablespoons vegetable oil
2 ½ cups diced cooked turkey
3 cup leftover mashed potatoes
1 yellow onion, diced
½ teaspoon kosher salt
½ teaspoon ground black pepper
2 cloves garlic, minced
½ teaspoon dried thyme leaves
2 tablespoon all-purpose flour
1 ½ cups unsalted or low-sodium chicken stock
1 pound frozen peas and diced carrots
Directions
Prep the Filling:
Heat the oil in a large skillet or nonstick frying pan over medium heat.
Add the diced onion, salt, and pepper. Cook until the onion has softened, about 8 to 10 minutes.
Add the minced garlic, diced turkey and dried thyme, and cook until fragrant, about 1 minute.
Sprinkle the flour over the mixture and cook for an additional minute.
2. Make the Sauce:
Increase the heat to high, then pour in the chicken stock. Bring it to a boil, then reduce the heat to a simmer.
Cook until the sauce has thickened, about 3 to 5 minutes.
