⅓ cup carrot , shredded
⅓ cup finely shredded cabbage
¼ cup chopped red bell pepper
1 teaspoon soy sauce
1 teaspoon Thai sweet red chili sauce (optional)
Butter lettuce or romaine lettuce
1 green onion, sliced (for garnish)
2 tablespoons fresh cilantro, chopped (for garnish)
Salt and pepper to taste
Sauce
2 tablespoons peanut (or almond butter or sunflower seed butter)
¼ teaspoon freshly grated ginger
2 teaspoon sriracha (adjust according to spice preference)
2 teaspoons low-sodium soy sauce
1 teaspoon lemon juice
