The Turkey Club Sandwich is the perfect solution for a quick and satisfying meal, especially when you have leftover turkey from a holiday dinner. This classic sandwich comes together in just a few minutes, making it an easy and convenient option for lunch or a light dinner. With layers of juicy turkey, crispy bacon, fresh lettuce, and ripe tomatoes, all tucked between toasted bread, this sandwich offers a delicious blend of flavors and textures. Whether you're repurposing holiday leftovers or simply craving a timeless favorite, this Turkey Club Sandwich is sure to hit the spot.

Yields: 1 serving

Ingredients

  • 3 slices of white bread (or whole wheat, sourdough, or multigrain)

  • 2 tablespoons mayonnaise (or Greek yogurt, avocado spread) 

  • ½ tablespoon mustard (Dijon, honey mustard, or spicy brown mustard)

  • 2-3 slices tomato (or cucumber, avocado slices)

  • 2 lettuce leaves, washed and dried

  • 5 ounces sliced  cooked turkey (About 3-4 slices)

  • 2 strips of bacon, cooked and crisp (or turkey bacon, or omit for a vegetarian option)

Directions

  1. Lightly toast all three slices of bread until golden.

  2. Spread a thin layer of mayonnaise and mustard on each slice of toasted bread.

  3. On one slice, layer half of the lettuce leaves, the tomato slices and turkey slices. Top with a second slice of bread, mayonnaise side down.

  4. On top of this second slice, layer the bacon strips, turkey slices, and the remaining lettuce.

  5. Complete the sandwich with the third slice of bread, mayonnaise side down.

  6. Slice diagonally, if desired, and enjoy!

Cook Bacon in the Microwave

Instructions:

  1. Prepare the Plate: Place a few layers of paper towels on a microwave-safe plate. The paper towels will absorb the excess grease during cooking.

  2. Arrange the Bacon: Lay the bacon slices on top of the paper towels. Make sure the slices are not overlapping; this ensures even cooking.

  3. Cover with Paper Towels: Place another layer of paper towels on top of the bacon. This will prevent grease from splattering inside the microwave.

  4. Microwave:Cooking Time: Microwave on high for about 1 minute per slice of bacon. Start with 4-5 minutes for 4 slices and add more time in 30-second increments if needed.

  5. Check for Doneness: Check the bacon after the initial time. The bacon should be sizzling and start to turn crispy. If you prefer crispier bacon, add more time as needed.

  6. Remove and Serve: Carefully remove the plate from the microwave using oven mitts, as it will be hot. Let the bacon sit for a minute to allow it to crisp up further. Serve immediately.

Note: Microwave power varies, so you may need to adjust the cooking time slightly. Keep an eye on the bacon to prevent it from burning.

Cook Bacon on the Stovetop

Instructions:

  1. Preheat the Pan: Place a large skillet or frying pan on the stovetop over medium heat. Let it heat up for a minute or two.

  2. Arrange the Bacon: Lay the bacon slices flat in the pan without overlapping them. If needed, cook in batches to avoid crowding the pan.

  3. Cook the Bacon:

    First Side: Let the bacon cook on the first side for about 4-5 minutes, or until it starts to curl and the edges begin to brown.

    Flip: Use tongs or a fork to carefully flip the bacon slices over.

    Second Side: Cook the other side for another 3-4 minutes, or until it reaches your desired level of crispiness.

  4. Adjust Heat: If the bacon is cooking too quickly or the grease is splattering excessively, reduce the heat slightly. Conversely, if it's cooking too slowly, increase the heat a bit.

  5. Remove and Drain: Once the bacon is cooked to your liking, use tongs to transfer it to a plate lined with paper towels. The paper towels will absorb any excess grease.

Note: Crispier Bacon: For extra crispy bacon, press the bacon down with a spatula while it cooks. This ensures even contact with the pan.

Notes:

Bread Choices: Whole wheat or multigrain bread adds a hearty flavor and extra fiber. Sourdough gives a tangy twist.

Healthier Options: Substitute Greek yogurt for mayonnaise to reduce fat and add a tangy taste.

Vegetarian Option: Omit the turkey and bacon. Add extra veggies like avocado, cucumber, or roasted red peppers for a delicious veggie club.
