The homemade pickles add a zesty crunch, while a touch of Sriracha provides a spicy kick, making this Banh Mi a standout option for an afternoon snack or a light meal.

Ingredients

Sandwich

  • 300-350g Christmas ham sliced (approximately1 cup) 

  • 1 long white baguette

  • ¼  cup mayonnaise

  • ¼ english cucumber slices

  • ½  jalapeño pepper, thinly sliced

  • 1 sprig cilantro

  • Sriracha sauce (optional)

Pickles

  • 1 cup rice wine vinegar

  • ½  cup  white sugar

  • ½  teaspoon salt

  • 2 carrots, peeled, cut into long matchsticks

  • 2 white radish, peeled, cut into long matchsticks

Directions

Prepare the Pickles:

  1. To make the pickles, place the vinegar, sugar and salt in a small saucepan over medium heat. Bring to a simmer, stirring until the sugar dissolves. Set aside to cool slightly.

  2. Place radish and carrot in vinegar mixture. Cover and chill for 30 minutes or until serving time.

Prepare the Sandwich:

  1. Heat baguette in a 350 degree F (175 degree C)  oven 3 to 4 minutes or until crisp. Remove from the oven and slice lengthwise, keeping one side attached to create a hinge.

  2. Spread 1 - 2 tablespoons mayonnaise on both sides of the bread. Fill baguettes evenly with cucumber, carrot, radish, ham, coriander and  jalapeño pepper.

  3. Drizzle Sriracha sauce on top of the vegetables. If desired. 

  4. Close the baguette and cut it in half, if preferred. Serve immediately and enjoy!
