Prepare the Mustard Mixture:
In a small bowl, stir together the Dijon mustard and honey. Set aside.
Prepare the Puff Pastry:
On a lightly floured work surface, unfold each puff pastry sheet.
Cut each sheet in three equal pieces
Spread the mustard mixture evenly over half of each pastry sheet, leaving a 1/2-inch border around the edges.

Evenly layer the sliced ham and grated Swiss cheese over the mustard-coated half of each pastry sheet, still leaving a 1/2-inch border around the edges.
Seal the Pastries:
Brush the edges of both pastry sheets with the beaten egg.
Fold each pastry sheet in half lengthwise over the filling to create rectangles.
Use finger/fork to crimp the edges and seal the pastries.
Brush the tops of each puff pastry with the remaining egg.
Bake:
Place the prepared pastries on the lined baking sheet.
Bake for 15 to 20 minutes, or until the pastries are puffed and golden brown.
Serve:
Allow the pastries to cool for a few minutes before serving.
