Ingredients
2 tablespoons vegetable oil
2 ½ cups diced cooked ham
3 cup leftover mashed potatoes
1 yellow onion, diced
½ teaspoon ground black pepper
salt to taste
2 cloves garlic, minced
½ teaspoon dried thyme leaves
2 tablespoon all-purpose flour
1 ½ cups unsalted or low-sodium chicken stock
1 pound frozen peas and diced carrots
Directions
Prep the Filling:
Heat the oil in a large skillet or nonstick frying pan over medium heat.
Add the diced ham, onion, salt, and pepper. Cook until the onion has softened, about 8 to 10 minutes.
Add the minced garlic and dried thyme, and cook until fragrant, about 1 minute.
Sprinkle the flour over the mixture and cook for an additional minute.
Make the Sauce:
