  • 1 refrigerated pie crust ( a 14-oz. box)

  • 10 ounces frozen chopped spinach thawed

  • 4 large eggs

  • 1 cup half-and-half

  • 1 tablespoon chopped fresh parsley, plus more for serving

  • 1 tablespoon Dijon mustard 

  • 1 1/2 tablespoon all-purpose flour

  • 1/4 teaspoon kosher salt

  • 1 cup diced cooked ham

  • 1 cup shredded cheese of your choice ( preferably sharp cheddar or gruyere)

  • 2 green onions finely chopped

Directions

  1. Preheat the Oven:

    • Preheat the oven to 375 degrees F (190 degrees C) and place a baking sheet on the center rack.

  2. Prepare the Spinach:

    • If the frozen spinach is not already thawed, thaw it in the microwave according to the package instructions.

    • Place the thawed spinach in a colander and squeeze out as much liquid as possible. Set aside.

  3. Prepare the Egg Mixture:

    • In a large bowl, whisk together the eggs, half-and-half, chopped parsley, Dijon mustard, flour, salt, and pepper until well combined.

  4. Assemble the Quiche:

    • Squeeze out any excess water from the spinach again to ensure it's as dry as possible, then scatter it evenly over the bottom of the pie crust.

    • Sprinkle the diced ham, shredded cheese, and chopped green onions over the spinach.

    • Pour the egg mixture over the ingredients in the pie crust.

  5. Bake the Quiche:

    • Place the quiche on the preheated baking sheet and bake for 40 to 45 minutes, or until puffed around the edges and the center is set.
