Ingredients
1 refrigerated pie crust ( a 14-oz. box)
10 ounces frozen chopped spinach thawed
4 large eggs
1 cup half-and-half
1 tablespoon chopped fresh parsley, plus more for serving
1 tablespoon Dijon mustard
1 1/2 tablespoon all-purpose flour
1/4 teaspoon kosher salt
1 cup diced cooked ham
1 cup shredded cheese of your choice ( preferably sharp cheddar or gruyere)
2 green onions finely chopped
Directions
Preheat the Oven:
Preheat the oven to 375 degrees F (190 degrees C) and place a baking sheet on the center rack.
