Ingredients
10 large eggs
1/3 cup milk
Salt & pepper to taste
1/2 teaspoon Garlic Powder
1/4 teaspoon Onion Powder
1/2 tablespoon Dijon mustard (optional)
1 cup Mexican blend cheese
1 cup leftover cooked small diced ham
Directions
Preheat the oven to 375 degree F (190 degree C)
In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, mustard, salt, and pepper until well combined.
Stir in the diced ham and Mexican blend cheese.
Spray a muffin tin with cooking spray or line with paper liners.
Pour the egg mixture into the muffin cups, filling them nearly full but not quite to the top.
Bake for 25-30 minutes, or until the muffins are cooked through and puffy.
