Ham Pineapple curry

Ingredients
2 tablespoon vegetable oil
1 cup leftover cooked ham diced
1 cup chicken broth
1 tablespoon soy sauce
1 teaspoon vinegar
½ of a can chunk pineapple ( with juice)
1 tablespoon brown sugar
½ teaspoon paprika
½ teaspoon curry powder
½ cup onion diced
4 cloves minced garlic (or 1 teaspoon ground garlic)
1 tablespoon freshly grated ginger ( or 1 teaspoon ground ginger)
1 tablespoon cornstarch
Salt and pepper to taste
¼ cup chopped cilantro
1 stalk green onion thinly sliced (for garnish)
Cooked rice for serving ( preferably Jasmine Rice)
Directions
Heat vegetable oil in a pan over medium heat.
Sauté the onion, garlic, and ginger until the onions are translucent and fragrant , about 3–5 minutes.
Add pineapple slices to the pan and sauté for 1 more minute.
Add curry powder and paprika to the pan and continue to cook and stir for a minute or two.
Add the cooked diced ham to the pan and cook for a minute.
Gradually pour in the chicken broth, soy sauce, vinegar, sugar and pineapple juice while stirring. Let the mixture simmer until it starts to thicken, about 10 minutes. Season with salt and pepper to taste.
In a small bowl, combine ¼ cup water and cornstarch; stir until smooth and set aside.
Stir the cornstarch mixture into the gravy. Add the chopped cilantro as well. Cook for an additional minute until the sauce thickens.
Sprinkle with sliced green onion before serving.
Serve with cooked rice. Enjoy!
